1lb lean groung beef
1 small onion diced
1 can tomato sauce
1can tomato paste
1/2tsp sugar
1/2tsp salt
2tps pepper
1 1/2 cups cooked rice
8-12 large leafs of green cabbage
Pre-heat oven to 425*
Fill a pot with water and set to boil. When it reaches a rolling boil turn down to medium heat and add cabbage leafs.
Brown meat and onion and put into large mixing bowl.
Stir in the rice, salt, pepper, tomato paste, and half of the tomato sauce. Set mixture aside.
After about 12min of boiling the cabbage should be done. It should be soft around the edges but still a little firm on the spine.It will also be a bright green.
Place a healthy scoop of the mixture into the center of the cabbage leaf and roll to the stem.
Place rolls open side down in a baking dish.
Mix sugar with the remaining tomato sauce and pour over the rolls. Bake for 30min.
This is a great east Indian meal my sister taught me to make.
Phulgobhi Matar Tamatar Sabji
2Tbs olive oil
1tsp mustard seeds
1tsp ground cumin
1tsp ground ginger
2tsp turmeric
1cup water
salt to taste
1 15oz can diced tomatoes
1 16oz bag of frozen Cauliflower
1/2 cup frozen peas
1can garbanzo beans, drained
Heat oil in a large pot.
add ginger,mustard seeds, and cumin and saute over low heat until the seeds 'dance'
add tomatoes(with their liquid)and cook for about 2 minutes, stirring frequently.
add cauliflower and turmeric. Stir in water. simmer for 10 minutes.
add peas and garbanzo beans and more water if necessary. Cover and continue to simmer until all vegetables are tender. Adjust salt to taste. Add cooked chicken chunks if desired, and serve over a bed of 'Mahatmah saffron rice'.
