Fried Chicken and Waffles



Here's a Southern dish that I have recently tried.

I have posted a recipe for Fried Chicken and Waffles but for the great experience of trying this use the Fried Chicken and Waffles you like the best!



Ingredients

For the chicken:



2 tablespoons lemon-pepper seasoning, divided

1 cup buttermilk

4 chicken thighs

Canola oil, for frying

2 cups all-purpose flour

1/2 cup cornstarch

Kosher salt and freshly ground black pepper



For the waffles:



1 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon sugar

1/2 teaspoon curry powder

Kosher salt and freshly ground black pepper

2 cups buttermilk

2 eggs, separated

3 tablespoons melted butter



To serve:



Maple syrup (optional)



Directions



In a large bowl, combine 1 tablespoon lemon-pepper seasoning with 1 cup buttermilk



Soak the chicken in the seasoned buttermilk for 30 minutes



Pour the canola oil into a deep, heavy skillet until the oil fills the pan about an inch up the sides. Heat the oil over medium-high heat until it reaches 375 degrees F.



Preheat the oven to 350 degrees F.



In another large bowl, whisk together the cornstarch, flour, remaining lemon-pepper seasoning, and a good pinch of salt, and pepper.



Remove the chicken thighs from the buttermilk, dip in the seasoned flour, then dip back into the buttermilk, and then into the flour again. Make sure to coat the chicken on all sides with each dip.



Fry the chicken until golden brown on each side, about 8 minutes per side. Transfer the chicken to a baking sheet and roast in the oven for 5 to 7 more minutes, or until cooked through.



While the chicken is cooking, make the waffles: Mix the flour, baking powder, sugar, and curry powder for the waffles in one bowl and whisk together the buttermilk, eggs, and melted butter in another bowl.



Combine the 2 mixtures by pouring the wet ingredients into the dry ingredients and stirring until just evenly combined.



Preheat a waffle maker and make waffles according to manufacturer's instructions. Cook the waffles until lightly golden. Make the waffles until you've used up all of the batter. Keep the waffles and chicken warm.

Chili Soup

Chili Soup



Ingredients

3 lbs ground beef

1 large yellow onion diced

2 cans dark red kidney beans drained

1 can tomato juice/ I recommend Campbell

1 can stewed tomatoes Italian style

Chili powder to taste

Garlic powder

Onion powder

Salt and Pepper

Water

Saltine Crackers

Chopped green onions (optional)

Shredded cheese (optional)

Sour Cream (optional)



1. Brown and crumble ground beef, while cooking season with Garlic and Onion Powder, drain fat

2. In a large pot/kettle add next 4 ingredients stir together.

3. Add water to fill the rest of the pot. Don't add to much water, (no more then half the can of tomato juice can size.)

4. Add chili power, salt, and pepper. Add a little. You can always add more as you go.

5. Bring soup to boil and turn down to medium. Make sure pot is covered or you will have a big mess.

6. Stir occasionally and add chill power, salt , and pepper according to taste. Cook until all ingredients are heated thoroughly approximately 20mins.

7. Serve with Saltine Crackers and topped with cheese, sour cream, and green onions.

Pineapple Mango Salsa

Pineapple Mango Salsa



Ingredients



1 c. chopped peeled mango

1 c. pineapple tidbits

1/2 c. diced sweet red bell pepper

1 plum tomato seeded & chopped

3 tbsp fresh chopped cilantro

1/2 red onion chopped

2 tbsp lime juice

1 tbsp lemon juice

1 jalapeno pepper finely chopped

salt and pepper to taste



1. Combine all ingredients

2. Chill for 1 hour

3. Serve with Tortilla Chips/ I prefer the White Tortilla Chips

Pea Salad

Pea Salad



1 lb Peas, fresh or frozen

1/2 Red Onion, small dice

1 cup Cheddar (I used white and sharp), cubed

3 slices Bacon, cooked and crumbled

2/3 cup Mayonnaise

1/3 cup Sour Cream

Pinch Cayenne

Salt and Pepper, to taste



1. Combine all ingredients.

put in Mayonnaise and Sour Cream in little by little to reach the amount you want. You may want more or less depending on your taste.

Roasted Corn Salad

Roasted Corn Salad



Ingredients



8 ears fresh corn in husks

1 red bell pepper, diced

1 green bell pepper, diced

1 red onion, chopped

1 cup chopped fresh cilantro

1/2 cup olive oil

4 cloves garlic, peeled and minced

3 limes, juiced

1 teaspoon white sugar

salt and pepper to taste

1 tablespoon hot sauce



Directions



1. Place the corn in a large pot with enough water to cover, and soak at least 15 minutes.

2. Preheat grill for high heat. Remove silks from corn, but leave the husks.

3. Place corn on the preheated grill. Cook, turning occasionally, 20 minutes, or until tender. Remove from heat, cool slightly, and discard husks.

4. Cut the corn kernels from the cob, and place in a medium bowl. Mix in the red bell pepper, green bell pepper, and red onion.

5. In a blender or food processor, mix the cilantro, olive oil, garlic, lime juice, sugar, salt, pepper, and hot sauce. Blend until smooth, and stir into the corn salad.
