I made some really good cookies today for my work peeps. Unfortunately, I didn't write anything down. =( This girl came into my work today because she is the sister of my co-workers bf, and she had a few cookies.



My co-worker said to me that she is surprised the girl liked them because she doesn't like raisins, and my cookies had lots of raisins in them. She wanted the recipe but I said I just made it up.



So....guesstimating....



Preheat oven to 350.



1/2 cup of margarine



1 cup brown sugar



1 large egg



1 tsp vanilla



1/2 tsp salt



1 tbsp pumpkin pie spice



1 tsp baking soda



1 1/2 cups oatmeal



1 cup flour



1/2 raisins



1/2 chocolate chips



Cream margarine and sugar. Beat in egg. Add vanilla, salt, pumpkin pie spice and baking soda, mix.



Add oatmeal and stir. Add flour and stir. Mix in raisins and chocolate chips.



Form into balls and place on foiled cookie sheet.



Bake for 9 minutes. Cool on wire rack.



For me it made a little more then 40 cookies.



=)



And only 6 were left by the end of the night.

Indeed they were. =) I have a TON of oatmeal and raisins to use up!



And I see I was tired while writing this.....



1/2 cup raisins and 1/2 cup chocochips. =)

Made for a friends baby shower. I also have another baby shower coming up in October, and a coworker wants a Sex and the City bday cake.



I have had only minimum cake decorating lessons, like 6, and I skipped 2. lol

Yes...think 2 Triangles, one larger than the other, can be made by cutting square cakes up.





Then, one long "stem" for the "glass".



Connect the 2 wit the stem, larger Triangle on top.



Blush pink icing, maybe candies for olives...white icing for lower Triangle and "stem".

Neato! =D Yeah she really wants the whole works and PINK! Lotsa bling bling. I don't even know when her birthday is lol Watch it be next year. -_-



Yep....just looked January 7 so I have lotsa time to plan. Heh. Still though, doing these kinds of thing get me soooo excited. I need ideas for the baby cake though.

I got this one out of a magazine.



Ooooooh sooooo gooooood!



And you could probably do this with any kind of berry. I really want to try it with pumpkin on top instead of berries. I think it would work well.



I also made my own pie pastry.



Blueberry Dream Pie




Ingredients



* Pastry for double-crust pie (9 inches)





CHEESE FILLING:

* 4 ounces reduced-fat cream cheese

* 1/2 cup confectioners' sugar

* 1 tablespoon lemon juice

* 1 egg yolk





BLUEBERRY FILLING:

* 1/2 cup plus 1 tablespoon sugar, divided

* 2 tablespoons all-purpose flour

* 1 tablespoon cornstarch

* 1/4 cup cold water

* 6 cups fresh or frozen blueberries, divided

* 2 tablespoons lemon juice

* 1 tablespoon minced fresh mint or 1 teaspoon dried mint

* 1 egg white, beaten



Directions



* Line a 9-in. deep-dish pie plate with bottom crust. Trim pastry to 1/2 in. beyond edge of plate; flute edges. Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack. Reduce heat to 375°.



* In a small bowl, beat the cream cheese, confectioners' sugar and lemon juice until light and fluffy. Beat in egg yolk until blended. Spread into crust.



* In a large saucepan, combine 1/2 cup sugar, flour and cornstarch; stir in water until smooth. Stir in 2 cups berries. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Cool slightly. Gently stir in the lemon juice, mint and remaining berries. Pour over cheese filling.



* Cut decorative cutouts in remaining pastry; arrange over filling, leaving center uncovered. Brush pastry with egg white; sprinkle with remaining sugar.



* Bake at 375° for 35-40 minutes or until crust is golden brown and filling is bubbly. Cover edges with foil during the last 15 minutes to prevent ove rbrowning if necessary. Cool on a wire rack. Refrigerate leftovers.

Broccoli & Cheddar Stuffed, Crusted Chicken




Let's see here....This recipe I did all on my own. I like being experimental in the kitchen. And, it came out awesome!



So I am going to guesstimate on the measurements, trying to picture them in my head.



Preheat oven to 400. I dunno what that converts too, but most ovens will show it. =p



I started with chicken breasts, still attached to the backs. So after gettin' my hands in there and swearing at the bloody things I ended up with...



4 chicken breasts.



I then proceeded to place a breast in a large Ziploc bag, and with marble rolling pin in hand, flattened the chicken boobies. (The day after I made more, and the guy I share the kitchen with came out and was REAL grumpy since his room is right behind the wall that I was banging near. And chewed me out. OOPS!)



I chopped maybe 1-2 cups of broccoli, real small.



And about 1/2 cup Old Cheddar.



As well as 2 garlic cloves.



I mixed the broccoli, cheese and garlic together. I thought of adding some salt and pepper, but I forgot.



I scooped a little of the mixture and put in in the middle of the breast, and wrapped it up all snug like.



I had bought, yes BOUGHT no need to be TOO fancy, some southwest style shake n bake for a bit of crispyness.



Put some in a bowl and rolled the wrapped up chicken in the crumbs and placed on a baking pan, with a little oil. ( Okay I lied, I used a liiiittle too much oil and it spattered all over the oven. =D )



Bake 20 minutes.



They turned out nice and tender, not dry at all.



Just nom.

Maple, Walnut & Flax Pancakes




1 cup all-purpose flour (or 1/2 cup whole wheat pastry flour and 1/2 cup all-purpose flour)



1/4 cup flax seed meal



1/4 cup finely chopped walnuts



1 1/2 teaspoons baking powder



1/2 teaspoon baking soda



1/2 teaspoon salt



1 1/4 cups reduced-fat buttermilk (can substitute 1/2 yogurt and 1/2 milk)



1/4 cup pure maple syrup



1 large egg



1 tablespoon vegetable oil (or more)







1. Whisk flour, flax seed meal, walnuts, baking powder, baking soda, and salt in medium bowl to blend. Whisk buttermilk, 1/4 cup maple syrup, and egg in another medium bowl. Add buttermilk mixture to dry ingredients and whisk just until incorporated.



2. Brush large nonstick skillet lightly with vegetable oil and heat over medium heat. Working in batches, add batter to skillet by scant 1/4 cupfuls. Cook until bubbles appear on surface of pancakes and undersides are golden brown, about 2 minutes. Turn pancakes over and cook until golden on bottom, about 2 minutes. Brush skillet lightly with vegetable oil as needed before adding each batch.



3. Transfer pancakes to plates. Serve with additional maple syrup or jam.





*I used half white flour, half whole wheat.



**For the milk I used half Balkan style yogurt and half milk. I should have added more milk because it came out thick and heavy, but still yummy. ^_^



I thin it would have tasted good with some cinnamon as well.



Also thinking, getting some apple in there too would be really good. Must experiment next time.

Only one way to find out! Hehehe. I really wanted waffles too, but no waffle iron. ='(



These puppies REALLY puffed up too. So maybe good for waffles.

I used Bisquick, added in apple, finely chopped walnuts and ground flax, top'd it w/maple syrup n butter....



Ohhhhh sooooo gooood...

Mmmm yummy! I also used to eat waffles with ice cream when I was younger. That would make a super dessert too I bet.
