Preheat oven to 350 F and grease and flour a 9x13 cake pan.
Stir together 3 cups all-purpose flour, 2 cups sugar, 2 teaspoons baking soda, 1 teaspoon ground cinnamon, 1/2 teaspoon ground cloves, and 1/2 teaspoon ground nutmeg.
In another bowl, mix up 2 cups of water, 2/3 cup of canola oil, 2 tablespoons of white vinegar, and 2 teaspoons of vanilla extract.
Add the liquid ingredients to the flour mixture and beat until smooth--batter will be thin, so don't thicken it. Pour immediately into prepared pan and bake for 25-30 minutes, until a toothpick inserted in center comes out clean.
Either top with honey immediately or cool completely and frost with a mixture of prepared vanilla or cream cheese frosting and 1/8 teaspoon cinnamon.
Note: this recipe has no eggs or dairy products! it made the most delicious cake for Samhain ritual..
