When and why did video game controls get so hard?

I've always been drawn to video games ever since I was a kid playing mario bros., duck hunt, track and field and the most difficult game at that time was simon's quest from the castlevania series... I played the hell out of my NES until my uncle got a Sega Saturn and I learned that way how to play games like bug juice, sonic the hedgehog and myst... I also had learned how to play mortal kombat and other fighting forbidden games and loved them... So far sounds like I was at the top of the gaming world right?... Well... Think again... I was still stuck with my NES and msdos desktop until I finally got a brand new slimline psone... The same year the playstation 2 came out... Now I was still ok with the gameplay and controls with the leap from 2 buttons and a "d" pad to 11 buttons a "d" pad and 2 joysticks and I fell in love with games like tekken, rayman, and road rash... I was another step behind when I upgraded to my slimline ps2 and all my friends had a wii or xbox 360... Now I'm an adult and live in a household with an xbox 360 and a fully backread capability playstation 3... There's a few games that I've learned to love like Fable, Assassin's Creed, Burnout, Grand Theft Auto, Need for Speed, Soul Calibur, Dead or Alive.... those types of games.... there's one thing I've noticed they all have in common... they're controlled with less buttons which is easier to relax into when I wanna play just for fun... with the latest waves of new games I've started to noticed a fast and steady increase the complexity in video games making them less fun and more mind/time consuming. The last 2 racing games that my household has purchased and played have had the gas and brake controls on the left and right triggers. It's not that I don't understand the concept of the games or controls, it's not that I can't do what the game is asking me to do, but I'm the type of gamer that is damn near programmed to keep my right thumb on the "d" pad and my left thumb on the A and B buttons (triangle and square for those who are sony fans) and although my index fingers may naturally rest where the triggers and bumpers are on the controller I haven't really needed the triggers or bumpers for main source of movements. All I'm wondering is when did video games start becoming all about triggers for movement, left on right joy stick, while pressing the left joy stick, A, Y, right on the left joystick, B just to move towards target opponent and jump over their head?..... I just wish we could go back to the days when my name being on the high score list on the Simpson's skateboarding game down at the local laundry mat meant something... at least then I could enjoy what I'm playing and not just the display graphics, sound and effects....
