This is just a note of sorts.
A week ago I made fried pork bites and they turned out so well that I need to note the elements for my reference.
I found the recipe online; a website called cook eat share.
It called for two Tablespoons of oil, I used butter and ended up increasing it from two Tablespoons to 4.
So 4 Tablespoons of butter melted over medium heat.
The recipe called for medium high but butter has a relatively low smoke point for frying. Medium to just a partial notch below worked out really well.

This works well with pork but maybe not with chicken.
I would try using beef too.
I was also in a bad frame of mind when I cooked last night so I might have had a poor result because my head wasn't in the game.
I may try chicken one more time but with smaller pieces and maybe dark meat,
