My french fry technique is derived from Joy of Cooking.
My additional step is to let them sit in hot water for a few minutes before tossing them with me at drippings or butter and baking them at 400 for 20 minutes.
Perfect every time. Second choice by the grandkid. She also likes buttered parmesan spaghetti noodles.
I use Kerrygold butter.
